He studied at the Simon Langton Grammar School for Boys in Canterbury.
McCallum began his professional career with the non-League team Herne Bay. In August of 2018, he made the move to the League One club Coventry City, having previously attended Jamie Vardy’s V9 Academy. Despite interest from other Premier League clubs, including Liverpool and Leicester City, Norwich decided to go ahead and sign McCallum.

McCallum was loaned to Coventry for the remainder of the 2020–21 season on September 20, 2020, marking his third stint with the club overall. On the 12th of July in 2021, McCallum once again made his way back to the Championship by signing a loan deal with Queens Park Rangers for the rest of the 2021–22 season. On September 14, 2021, he debuted for QPR by scoring a goal against Bournemouth.
Sam McCullum was a significant person and a leader during a contentious period between the National Football League (NFL), its owners, and the NFL Players Association (NFLPA). After being selected by the Minnesota Vikings in the first round of the draft in 1974, McCullum was claimed by the Seattle Seahawks in the expansion draft 1976. Before each preseason game 1982, the former Montana State wide receiver demonstrated the pre-game handshake that the NFLPA scheduled. This demonstration took place for the Seahawks.

This demonstration was a show of support from the whole league for the Percentage of Gross Proposal, which is expected to result in a strike sometime during the regular season. In reaction to the protest, the former head coach of the Seahawks, Jack Patera, issued a warning to any player who participated, stating that they would be subject to a substantial fine equal to the amount of a complete game check during the regular season. However, under the direction of McCullum, the Seahawks went ahead and took part in the handshake regardless.
The NFL Players Association has submitted a request for mediation to the National Labor Relations Board. One week later, the NFL Management Council prevailed to have Patera withdraw the punishment by applying pressure from the NLRB. Patera finally fired McCullum just before the start of the 1982 season as a direct consequence of the public humiliation that this situation produced. After being picked up by the Minnesota Vikings not long after the start of the regular season, McCullum became an active leader for the club he had previously played for after the strike started in September.
Meanwhile, the NFL Players Association (NFLPA) and McCullum took legal action against the Seahawks for engaging in unfair labor practices by wrongfully eliminating McCullum from the team due to his union involvement. McCullum emerged triumphant after a ten-year legal struggle, and at the time, the National Labor Relations Board (NLRB) granted him the most excellent back pay judgment in its history. Since his retirement in 1983, McCullum has been an active member of the NFLPA Former Players organization, where he now holds the position of trustee on the Bert Bell/Pete Rozelle NFL Player Retirement Board.
